Our Master Distiller picks herbs in their best quality in terms of aroma and flavor extraction. Mastic gum is a resin that comes from the mastic trees of Chios . We pick only the finest quality as it is officially sold and garanteed by Chios Gum Mastic Growers Association.

Under the supervision of a representative of the state's general chemistry lab our master distiller follows a certain framework to fill the still with the ingredients. This procedure and the line of the ingredients entering the still is an art with our master distiller securing and maximizing quality.

Using alembic stills we follow a very slow distillation process of 8-10 hours. Using direct fire to raise still's temperature we make "head" and "tail" cuts following a very conservative framework in terms of quality. Our master distiller checks temperature , alcoholic strength but only when he decides by taste, distillate clarity and aroma makes the first and last cut . The result is a hearts fraction, a distillate of high quality to use in making Chandolia Mastic liqueur.
